CAMBIUM AT CAREYS MANOR AWARDED 3 AA ROSETTES

Now recognised amongst the top 10% of restaurants in the UK.

It has just been announced that Cambium at the Careys Manor Hotel  has been awarded three AA rosettes. This coveted accolade is only awarded to outstanding restaurants that achieve standards demanding recognition well beyond their local area, and only 10% of the restaurants/hotels within the AA Restaurant Guide have three rosettes and above.

This award puts Cambium alongside just 2 other restaurants in the new forest, including its sister restaurant, The Terrace at The Montagu Arms hotel in Beaulieu.

“This is truly thrilling for us as Cambium has been open less than a year, and to have achieved this level of award so soon is an enormous tribute to our Executive Chef Paul Peters, his brigade, and all the front of house staff in the restaurant,” said Operations Director, James Hiley-Jones.

“High quality is only achieved through hard work and commitment, and everyone has played their part in bringing this landmark restaurant which showcases the magnificent produce of the New Forest and surrounding areas to the level which has earned it this prestigious award.”

Cambium at the Careys Manor Hotel & SenSpa, pays homage to the forest and its surroundings in every aspect of its design and every dish on its menu.

The forest-chic interior was created by the exclusive design duo of Sue and Bonnie Stowell from Hampshire. Employing local artists and craftspeople, the pair created a rich, elegant and relaxing space that draws its inspiration from the New Forest itself, with nature leading the way on the scheme.

The chef behind the culinary concept is Paul Peters, an Australian-born chef with an impeccable reputation for fusing modern techniques with his classical training.

Combining modern cookery methods with traditional home grown and harvested ingredients, Paul has created a menu that captures the essence of the local area and embraces the nature of the seasons. Ingredients are sourced and grown locally as much as possible, ensuring they go from farm to fork in the shortest time.
