Whilst ordinary gins boil their botanicals directly in the spirit to achieve their flavour, Bombay Sapphire is created through a Vapour Infusion process. >The 10 botanicals used in their gin are held separate from the spirit in perforated copper baskets, and when the heated vapours rise, the distinctive flavour of the botanicals are released. Distilled at the Winchester Distillery, their small batch gin combines ten botanicals including local watercress to create a spirit that is intense, fragrant and refreshing. Winchester is at the heart of an area that has been cultivating Watercress since the 18th century – the local chalky earth and pristine, crystal-clear streams create the ideal environment for this incredible herb to thrive. On drinking, pine notes of Juniper emerge first followed by fresh citrus and deeper spice tones. Conker Spirit is Dorset’s first gin distillery founded by Rupert Holloway. There’s no ancient family recipe or mythical Master Distiller here, just a dogged pursuit of the new and exciting. They started from scratch, meticulously tweaking the Dorset Dry, fine-tuning the recipe sip by sip to compose a fresh approach to gin with a ruthless focus on quality.
