Paul’s Watercress Soup – Recipe

800gm Watercress (Picked leaves only no storks)

400gm Potato (Sliced Fine)

200gm White Onion (Chopped into Small Dice)

50gm Butter

3000ml Water


Place butter into large pan and heat till butter starts to melt and then add the onion and potato and season with salt and pepper,

When the potato and onion is soft add the water and bring to the boil, add the watercress cook till the watercress brakes when you rub it between your fingers, this should only take 5 minute.

Take of the stove and place little bit at a time in a blender and then pass the mix through a fine strainer.
